Diacetyl

A fermentation byproduct with a buttery or butterscotch flavor and aroma. While acceptable at low levels in some English ales and Czech lagers, diacetyl is considered an off-flavor in most styles. A diacetyl rest — raising temperature near the end of fermentation — allows yeast to reabsorb this compound.
