WLP565 Belgian Saison I (believed to be the Dupont strain) is the definitive saison yeast. It produces peppery phenolics, fruity esters, and a bone-dry finish. Notoriously temperamental — it may stall around 1.035 but finishes very dry when allowed to warm.
