Head Retention

The persistence and quality of foam on top of poured beer. Good head retention depends on proteins (especially from wheat and crystal malts), iso-alpha acids from hops, high carbonation, and clean glassware. Oils, lipids, and detergent residue destroy foam. The foam itself acts as an aroma trap.
