Ale

A broad category of beers fermented with top-fermenting Saccharomyces cerevisiae yeast at warm temperatures (60-75 °F / 15-24 °C). Ales tend to ferment faster than lagers and produce more esters and phenols, giving them fruity, spicy, or complex flavor profiles. The category spans pale ales to stouts.
