Kilning
The controlled drying and heating of malted grain to halt germination and develop color and flavor. Pale kilning at low temperatures preserves enzymes and produces light base malts. Higher temperatures create Munich, Vienna, biscuit, and aromatic malts, each with progressively deeper flavor and color.
