Paulaner is one of Munich's 'big six' Oktoberfest breweries, tracing its origins to 1634 when Paulaner monks brewed doppelbock during Lent. Their Salvator is the original doppelbock, and the suffix '-ator' on doppelbocks worldwide pays homage to this beer.
