DMS (Dimethyl Sulfide)

A sulfur compound that produces a cooked corn, creamed corn, or cooked vegetable aroma in beer. DMS is formed from S-methylmethionine (SMM) in malt during the boil and driven off by vigorous boiling and rapid cooling. Pale lager malts are highest in SMM precursor; a strong, uncovered boil is critical.
