Dunkles Weissbier
Description
A moderately dark German wheat beer with distinctive banana-and-clove yeast character, supported by toasty bread or caramel malt flavors.
Aroma
Weizen yeast character with banana esters and clove-like phenols. Supported by toasty, caramel, or chocolate malt aromas from darker malts. Low hop aroma. Rich and appealing combination of malt and yeast.
Appearance
Copper to dark brown, 14-23 SRM. Hazy from yeast. Off-white to tan creamy head with good retention.
Flavor
Banana and clove from Weizen yeast combined with toasty caramel malt flavors. Light chocolate possible. Very low hop bitterness. Semi-dry finish. Rich yet refreshing combination.
Mouthfeel
Medium body with high carbonation. Smooth and fluffy. Slightly thicker than Weissbier from darker malts. Refreshing.
History
The dark version of Bavaria's ancient Weizen brewing tradition, predating the development of pale wheat malt in the 19th century. Historically the original Weizen beer before pale malting was perfected. Schneider Weisse Tap 6 and Franziskaner Hefe-Weissbier Dunkel are classic examples. A more complex, less trendy sibling to the pale Weissbier.
