Sour Beer

A category of beers intentionally acidified by Lactobacillus, Pediococcus, or Brettanomyces. Traditional sour styles include Belgian Lambic, Gueuze, Flanders Red, and Berliner Weisse. Modern kettle-soured beers achieve tartness quickly by souring the wort before fermentation with standard yeast.
