Brettanomyces lambicus is a species of wild yeast traditionally found in Belgian lambic breweries. It produces intensely funky, sour, and fruity flavors including cherry pie, pineapple, and barnyard. It works more slowly than B. bruxellensis but is essential for authentic lambic character.
