Hop Creep

An unintended refermentation caused by enzymes present on hop matter during dry hopping. These enzymes (primarily amyloglucosidase) break down residual dextrins into fermentable sugars, leading to over-attenuation, increased alcohol, diacetyl production, and potential over-carbonation in packaged beer.
