Lambic Tradition

The centuries-old Belgian practice of spontaneous fermentation, where wort is cooled overnight in a shallow coolship vessel, exposed to wild yeast and bacteria carried by ambient air in the Senne valley near Brussels. Traditional lambic ages in oak barrels for 1-3 years, producing complex, tart, funky beers.
