Georg Schneider II created this style in 1907 by applying wheat-brewing technique to a strong-beer format, and his Aventinus is still its benchmark. A Bavarian hybrid, it fuses the banana and clove yeast of a Weissbier with the malty depth, strength, and body of a Doppelbock. It is potent, running 6.5 to 9 percent alcohol from a high original gravity of 1.064 to 1.090, with a broad 6 to 25 SRM span that covers both pale and dark versions and a restrained 15 to 30 IBU. The result is malty, fruity, and warming without the hop assertiveness of the ale family. Weihenstephaner Vitus takes the pale route, while Schneider Weisse Aventinus, Ayinger Weizenbock, and Plank Weizenbock hold to the dark original. It is designated BJCP 10C.
