Alpha Acid

The primary bittering compounds in hops, expressed as a percentage of the hop cone's weight. During the boil, alpha acids undergo isomerization into iso-alpha acids, which are soluble and provide the characteristic bitterness in beer. High-alpha hops (12%+) are efficient bittering varieties.
