Description

A strong, full-bodied, rich, and malty dark German lager often with a viscous quality. The process of freeze-concentrating produces intense flavors.

Arôme

Intensely rich malt aroma with dark dried fruit, chocolate, toffee, and molasses notes. Noticeable alcohol warmth. Low hop aroma. Concentrated and complex from freeze-concentration process.

Aspect

Deep amber to dark brown, often with ruby highlights. Very clear from concentration. Off-white to tan head, may be thick and persistent.

Saveur

Intensely concentrated malt flavor: dark fruit, chocolate, caramel, molasses. Warming alcohol throughout. Very low hop bitterness. Sweet to semi-dry finish. Viscous and complex.

Texture en bouche

Full, viscous body with low to moderate carbonation. Warming alcohol. Rich and thick. Silky smooth texture from concentration.

Histoire

A Bavarian invention, purportedly created accidentally when frozen barrels of Doppelbock were discovered at the Reichelbräu brewery in Kulmbach. The freeze-concentration removes water as ice, intensifying all remaining flavors and alcohol. Kulmbacher Eisbock remains the classic example.
