Adding hops to beer after fermentation (or during late fermentation) without heat, extracting volatile oils and aromatic compounds while adding minimal bitterness. Dry hopping is essential to modern IPAs and pale ales, contributing intense hop aroma of citrus, tropical fruit, pine, or stone fruit.
