Zymurgy
The science of fermentation, derived from the Greek word 'zyme' (leaven). In brewing context, zymurgy encompasses the biochemistry of yeast metabolism, enzyme kinetics, and fermentation management. It is also the name of the American Homebrewers Association's bi-monthly magazine, published since 1978.
