Pale Ale Revolution

The 18th-century shift from dark, smoky beers to clear, pale ales enabled by coke-fired kilns that could dry malt without imparting smoke. The development of pale malt in England, combined with hard water from Burton-upon-Trent and abundant English hops, gave rise to bitter, IPA, and the pale ale tradition that endures today.
