First Wort Hopping

Adding hops to the kettle during lautering, before the boil begins. The hops steep in the hot wort as it collects, producing a smoother, more integrated bitterness compared to traditional boil additions. First wort hopping is associated with reduced perceived harshness despite similar IBU levels.
