Hop Oils

Volatile aromatic compounds found in hop lupulin glands, including myrcene (herbal, resinous), humulene (spicy, earthy), caryophyllene (woody, peppery), and linalool (floral, citrus). These oils are highly volatile and driven off during long boils, which is why late and dry hop additions maximize aroma.
