Maillard Reaction

A complex chemical reaction between amino acids and reducing sugars that occurs during kilning and wort boiling, producing melanoidins — brown-colored compounds responsible for bready, biscuity, toffee, and caramel flavors. Melanoidin formation increases with higher temperatures and longer process times.
