Boil

The vigorous boiling phase after lautering, typically lasting 60-90 minutes. Boiling sterilizes the wort, isomerizes hop alpha acids for bitterness, drives off volatile off-flavors like DMS (dimethyl sulfide), concentrates sugars, and causes proteins to coagulate into hot break material.
