Lautering

The separation of sweet wort from spent grain after mashing. The grain bed acts as a natural filter; the brewer recirculates cloudy wort (vorlauf) until it runs clear, then drains the liquid to the kettle. Sparging with additional hot water rinses remaining sugars from the grain.
