Farmers of Wallonia once brewed this in winter for their workers to drink through the summer harvest, a farmhouse ale tradition shared with northern France. Refreshing and highly attenuated, it is hoppy and fairly bitter with a very dry finish, high carbonation, and fruity, spicy yeast character, at 5.0 to 7.0 percent alcohol with 20 to 35 IBU and a 5 to 14 SRM colour. Dupont's Saison Dupont, from the 1950s, became the template for the modern revival, which Michael Jackson's writing later carried to an international audience.
