Appearance

Gold to amber, 6-14 SRM. Clear to slightly hazy. White to off-white head, not large. Typically pulled and served with moderate carbonation.

Flavor

Low to moderate hop bitterness with earthy, herbal English hop flavor. Low to moderate biscuity or lightly caramel malt. Possible light fruity esters. Refreshingly bitter finish.

Mouthfeel

Light to medium body with moderate to high carbonation. Smooth and clean. Dry finish. No harshness.

History

Developed in the English pub tradition as a low-strength, highly drinkable everyday beer. The term 'bitter' dates to the 19th century when well-hopped draft ales were distinguished from sweet 'mild.' Became the defining everyday pub session beer of England, typically served cask-conditioned (real ale).
